Tortilas with chicken


To make the tortilas:
2 cups flour
1 tsp baking powder
1/8 cup corn oil
1/4 salt

For fillings:
2 cups shredded cabbage
4 tbsp mayonnaise
4 pieces baked chicken-shredded
 taco hot sauce
8 slices of cheddar cheese

For omelet:
6 eggs
4 tbsp chopped chives


1. To make the tortilas, mix altogether and knead to a soft dough. Leave to rest for an hour.
2. Divide dough into 8 pieces. Roll each piece onto a floured board to a paper thin sheet.
3, place it on a medium heat grill and cook on both side for less than a min. Keep warm.
4. Mix mayonnaise with cabbage. For omelet beat the eggs with chive and salt and divide equallly to get 8 omelets.
5. place the omelet on the tortila, top with mayo  cabbage, chicken, and cheese. Spread taco sauce for extra spicy.Fold in half and serve. Yum!!

    To be honest, i'm a guy and the easy way to any man's heart is great food - the simpler the better - can't beat just Roast meat and potatoes - then any man will be up for anything or any chore without complaint.

    Yum! This looks devine. Definately would like to try this recipe. Would be great to add to my repitoire of Uni meals :P. The omelet in it is something different also! Would be a very easy simple dish to make! I really like it how this has a recipe with how to make the bread too! - never thought of making the bread! Doesnt look to hard. Gotta give this recipe a try. Thanks for posting (:

    What a forgiving recipe! I attempted to make this for dinner tonight and though I didn't follow it exactly it still tasted goooood! We didn't have the taco sauce so I just used garlic and avocado dressing, I had no chives so I used spring onion and I accidently used self-raising flour instead of regular flour!!! Doing that made the tortilas look sort of obese compared to the ones pictured here but on the whole it tasted like a fiesta in my mouth for sure! Easy as too.

    Recipes like this are awesome because like Jo has mentioned above you can easily use alternatives touit your taste or use ingredients already in the pantry!

    My grandkids can help me make the tortilas for Sunday lunch. They love playing with playdoh and helping cook so it'll be fun [and no doubt messy but Grandpas are use to kids mess!]

    Instead of mayonnaise, I sometimes like to use sweet thai chilli sauce. And to give it some real texture, I would even add a bit of avocado. Now we talking. YUM!

    My tortila recipe is just 100gms butter, 1 cup hot water, 4 cups flour, 1 teaspoon salt. You can mix it by hand, but I use a breadmaker for the dough. Divide into 16 portions. Let rest 10 minutes. Roll each ball out to the size of a dinner plate.
