The Egg Guy’s Microwave Scrambled Eggs

Microwave Scrambled Eggs

Serves: 1

Ingredients

2 Eggs

2 Tablespoons of Trim milk

Pinch salt

Pinch freshly ground black pepper

Method

- A quick and easy way to cook scrambled eggs and you don’t even need a stove. Perfect for aweekday breakfast or a fast snack, and a great way to get kids into cooking.

- Beat 2 eggs with 2 tablespoons low-fat milk in a microwave-safe coffee cup or bowl. Beat well soyolks and white are well mixed. Cover with plastic wrap (NB leave a small gap as a steam vent).

- Microwave on MEDIUM-HIGH for 45 seconds, stir and cook for another 45 – 75 seconds, stirringseveral times during cooking. (Note: Cooking time will vary dependent on your microwave wattage).

- Cover and let stand for 30 seconds to 1 minute before serving. The eggs will look slightly moist, butwill fi nish cooking upon standing. While eggs are cooking, toast your toast.

- Serve immediately. Enjoy.

    Scrambled eggs in the microwave is so quick and easy and cleaning up is easy too - no pots has got to be a bonus. It's always a good idea to cover them - I use a paper towel as exploded egg through the microwave is a pain to clean up.

  • Also nice with a bit of chives and cream cheese! (looks posh if you serve it with smoked salmon)

    used to make microwave scrambled egg for my niece when she was a toddler - she won't touch them now - but it's a great way of doing it.

    My eggs tend to explode in the microwave, I prefer cooking them in over the stovetop. Eggs are so good though, healthy and versatile for a quick feed. We have two chickens now which should soon be giving us a daily supply of eggs.

  • Mate, this is a great and easy breakfast to make, however if you want to put a wee twist on your scrambled eggs try replacing the milk with orange juice (yes I did say orange juice!!). The scrambled eggs still come out great but with abit more flavour. My daughter came up with this and I thought she was nuts until I tried it, and it was really quite good!!
