Balsamic-Glazed Salmon Fillets

A glaze featuring balsamic vinegar, garlic, honey, white wine and Dijon mustard makes baked salmon fillets extraordinary.

Ingredients

    * 6 (5 ounce) salmon fillets
    * 4 cloves garlic, minced
    * 1 tablespoon white wine
    * 1 tablespoon honey
    * 1/3 cup balsamic vinegar
    * 4 teaspoons Dijon mustard
    * salt and pepper to taste
    * 1 tablespoon chopped fresh oregano

Directions

   1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
   2. Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
   3. Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
   4. Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

    I tired this last night, it was awsome, I did the lamb shanks the other week as well, the orange really came through in the meat it was awsome. Am going to try cooking some rabit legs the same way as the shanks should be an interesting effort. Cheers rich.

    Now I'm not much of a cook, but the wife has been working hard with the anklebiters lately so I wanted to cook her something special. As tempted as I was to order in a pizza, I went off to the supermarket to buy a piece of salmon, her fav. I had no idea what to do with it, so you can imagine my relief when I came across this recipe (while checking out the swimsuit models, but the wife doesn't need to know that). Let's just say I am now a legend and have managed to score a zillion brownie points thanks to you. Cheers!

    OHHH MYYYY GOSSSHHHH!!!! I tried this recipe last night to satisfy my fish craving.. and I was blown out at how amazing it tasted.. Fish heavenly fish.. So simple yet delightful.. Takes me to heaven with every piece in mouth.. YUMMMMMMMMMMM

    What a superb recipe. I had all the ingredients and made it for the family last night.

    Simply devine.

    Luckily I had found the Salmon Fillets half price yesterday so it was quite an inexpensive meal. Had roasted vegetables sprinkled with oil with this meal - pumpkin, kumera, capsucum, potatoes, onions, carrots with green beans thrown in at the end.

    Whew family thought it was delicious and with university exams tomorrow it's brain food!!!
