Pahia Peach Punch Blocktail recipe from IceBar Co. ice blocks

We’ve been discovering the joys of Blocktails, the cocktail trend from New York with a delicious Kiwi twist from local good guys the IceBar Co.  Their new ice block is Summer Peach Ice Tea - joining last summer’s favourites Classic Brewed Ginger Beer and Lemon Lime & Bitters.  It’s way too delicious not to taste.  

Having Summer Peach Ice Tea ice blocks in the office meant we couldn’t resist trying out IceBar Co.’s new recipe for the Paihia Peach Punch, inspired by a trip to sunny Paihia.  Using the ice block to make an irresistibly refreshing summer cocktail, we made this recipe by Auckland bartender Danny McNamee from Ginger Minx.

Paihia Peach Punch

1. Thaw IceBar Co. Summer Peach Ice Tea ice block so that it can slide of the stick
2. Once stick removed, place in a shaker or highball glass
3. Add 45ml (3 measures) of Beefeater Gin and 15ml (1 measure) of lime juice
4. Shake or muddle and stir
5. Pour into glass with ice and top with soda
6. Garnish with slice or wheels of cucumber and mint leaves
