Almond Mandarin Salad

Sweet mandarin oranges, crunchy almonds, fresh green onion, and crispy bacon are all tossed together with red leaf lettuce and a light honey mustard vinaigrette. Oh, so good and refreshing. Enjoy!

Ingredients

    * 1/2 pound bacon
    * 2 tablespoons white wine vinegar
    * 3 tablespoons honey
    * 1/2 teaspoon dry hot mustard
    * 1/2 teaspoon celery salt
    * 1/2 teaspoon ground paprika
    * 1/4 cup olive oil
    * 1 head red leaf lettuce, torn into bite-size pieces
    * 1 (15 ounce) can mandarin oranges, drained
    * 1 bunch green onion, diced
    * 3/4 cup slivered almonds

Directions

   1. In a medium skillet over medium-high heat, cook bacon until evenly brown. Drain, cool, and crumble.
   2. To make the dressing, thoroughly blend the vinegar, honey, dry mustard, celery salt, paprika, and olive oil.
   3. Place lettuce, oranges, green onion, bacon, and almonds in a serving bowl. Toss with dressing and serve.

  • YUM! Whenever I go to Wendy's now, I usually get either the Taco Salad or their Mandarin Chicken Salad...(doctor's orders, gotta give up the burgers and fries)... ;)

    I LOVE mandarins in salad, they go so well...mmmm...bacon and mandarins...perfect ;)

    I have also started making salads at home...not just the usual plain old lettuce and tomato...I'm using lean chicken, chick peas etc for protein...plus I often chuck in some pear or apple for a fruity flavour. YUM.

    Will definitely be trying this recipe next.

    Good looking salad... What a healthy meal - I'd just throw a whopping big steak on the side.. oh and maybe a big ole stuffed baked potato too..... With a nice glass of Central Otago pinot gris or three....... Health all round.

    Looks so good. With Spring underway now its time to start thinking of the summer meals!
    Flatting get bit sick of rice and what ever meat is on special so think I'll splash out and buy the stuff for this. Give it a try next week
